I promised to post a snippet of my diet regimen, so here it is. I keep a food and exercise log, and I'm religious about staying on top of it. I think it's a matter of accountability, as I find myself thinking twice about eating the candy or cookie knowing that I won't want to enter those calories in my log. I track my blood pressure and heart rate in addition to calculating my theoretic weight loss versus actual.
